Make this salad when you need a fresh, flavorful accompaniment for dinner or a nice healthy lunch!
Ingredients for Salad:
1 small head of lettuce or a mixture of salad greens, torn coarsely
2 small Granny Smith apples finely diced
6 oz. of walnuts
6 oz. of Feta
Thinly sliced red onions (optional)
4 oz. dried fruit, (craisins, chopped apricots, diced dates, or any combination of dried fruits)
Salad Dressing:
1 small 4oz. cup of apple sauce
1 tablespoon of balsamic vinegar
2 tablespoons of brown sugar
Salt and pepper to taste
Mix the salad ingredients together in a big bowl and toss together.
In a food processor, blend all the salad dressing ingredients, and adjust seasoning to taste.
When ready, serve salad with the dressing on the side.
